That’s how I was taught, but you can teach an old dog new tricks, if you will filet the skin off mahi and kingfish you will remove the fiber type membrane that is left on the filet from peeling the skin off, tight lines and calm seas to you, nice bull.

I’ve found that the mahi when skinned that way sometimes has an “inner” skin that makes it tough to eat. On a fish of that size, the rib bones are plenty big enough to eat around, or boil it to make fish stock. My dad would have smacked me upside the head for wasting anything. He would cringe at the size of fish I filet now that I live in the Keys!
